Homemade Porcini mushroom salt
Earthy porcini mushrooms and salty Parmesan are a winning Italian combination. Ground and mixed with salt, they become the perfect seasoning for scrambled eggs chicken or creamy pasta.
You will need a coffee or spice grinder for this recipe.

INGREDIENTS
- 1/2 ounce dried porcini mushrooms
- 1/2 cup salt flakes
- 2 tablespoons finely grated Parmesan cheese
INSTRUCTIONS
- Place the mushrooms in a coffee or spice grinder and pulse into small, flaky bits no larger than a sesame seed, about 10 to 15 (1-second) pulses. Transfer to a medium bowl, scraping out any bits from the grinder.
- Add the salt and Parmesan cheese to the bowl and whisk to combine. Store in an airtight container at room temperature for up to 2 months.
Homemade Asian citrus salt
Ingredients
- 6 kaffir lime leaves, shredded
- 2 tsp Sichuan peppercorns
- 1/2 tsp Chinese five spice
- 40g (1/4 cup) sea salt flakes
Method
- Preheat oven to 150°C. Place the lime leaves, Sichuan peppercorns, Chinese five spice and salt in a mortar and pound with a pestle until coarsely crushed.
- Transfer to a baking tray. Bake in oven for 5 minutes or until dry. Set aside to cool completely.
3. Store in an airtight container.
Great on chicken, pork, fish and vegetables.
